We collaborated with Capisco, the vibrant Italo‑Peruvian bistro in Old Montreal, to design and supply their kitchen and bar. This project showcases how thoughtful commercial kitchen design, premium bar and kitchen equipment, and strategic space optimization can elevate service in a fusion‑cuisine hot spot.

Located at 85 Rue Saint‑Paul East in Old Montreal, Capisco unites the bold, comforting flavors of Peru and Italy through creative fusion cuisine. Helmed by Chef Marcel Olivier Larrea, the menu features standout dishes like ceviches, tiraditos, Carbonara with aji amarillo, pan con chicharron, and arroz con pato arancini. The elegant yet welcoming setting meshes upscale bistro ambiance with comfort food vibes, drawing families, groups, and cocktail enthusiasts.
